"Every year a small batch of white wine named after Joostenberg’s current matriarch and gardener extraordinaire, Gillian Fairhead are made. This wine honours the women of Joostenberg whose substantial efforts, in a male dominated society, have often been unrecognized. Vinyards: Made from organically grown vineyards on Joostenberg Estate. Climate is Mediterranean and soils are a combination of decomposed granite and clay shales. Only estate-grown vineyards were used. • 19 year old Roussanne planted in clay rich soil. • 30 year old, dry-farmed, Chenin Blanc planted in clay-rich soil. • 19 year old Viognier vineyard, planted in rocky, granitic soil.
Vinification: Hand-picked and mainly whole-bunch pressed. 9% fermented on the skins. Spontaneous fermentation in old barrels (37%) and concrete "eggs" (63%). Maturation "sur lies" for 10 months. Full malolactic fermentation occurred. The wine was subjected to minimal stabilization and filtration.
Tasting notes: Medium-bodied, luscious white wine. Layers of flavours and subtle wooding. Will develop even more complexity over the next 2-5 years.
